Wine varieties : 50% Grenache blanc, 50% Roussane
The Land : Light colored clayey land (for which the vine has been named) This parcel was planted in 1947.
Vinification : Manual harvest in tubs. Juice extraction using the whole grape regime. The fermentation process is done in casks made from Lithuanian oak.
Maturing of the wines : The wine is matured in casks during 24 months and in which no wine is added during that time so that a light oxydation processes takes place.
At the table : The roundness and fullness of this wine with the light oxydation it gives, demands pairings that are well chosen. Spanish « Iberique » ham of the best quality, Meditterranean style fish reciepes, an aged piece of Cantal cheese, or even kidneys in a Sherry sauce would pair well.
