Cépage : Carignan 50%, Syrah 25%, Grenache Noir 20%, Mourvèdre 5%
The soil : “La Colomina” is a large vineyard where the three major grape varieties grow on mixed soil structures varying from deep layers of clay to the beginning of the big stony terraces to the west.
Wine making : The grapes are hand-picked and taken to the winery in crates. The grapes are destalked and crushed directly above the vats with a portable de-stemming and crushing machine. The vatting period lasts about two weeks.
Elevage : 3 ans en cuves.
Remarks : The old Carignan vines planted in 1950 and 1952 provide the structure of the wine and help bring out the flavour of the grapes from the 45 year-old Grenache vines and the young 25 year-old Syrah vines. To conserve the fresh character of the 2011 vintage we bottled a certain quantity of this wine in early April.
Gastronomy : A very fruity wine, smooth but with a pleasant tannic firmness which makes it an ideal partner for charcuterie, improbable quickly rustled up dishes and various surface-ripened soft cheeses like a Gaperon cheese from the Auvergne region.
